Butchery is one of the oldest crafts in the world, where innovation meets tradition and plays a critical role in our economy. This apprenticeship has been designed to fully prepare you for careers in a vast range of butchery environments and businesses, from the largest processors and supermarkets to the smallest high street butchers and independent farm shops.

The apprenticeship provides you with the skills, knowledge and behaviours required by butchery employers. It is endorsed by the Institute of Meat (IoM), the professional body for those working in the meat industry.

Topics could include:

  • Methods of butchery across a range of products including game, poultry and meat
  • The history of modern day butchery
  • Religious butchery methods
  • The provenance requirements of the industry

Assessment Methods

You will be continually assessed in the workplace to develop an evidence log showing your development across the butchery range and knowledge. There are also three exams at the end of the course that include an observation in the workplace, multiple choice test and professional discussion.

Alongside the course, you also gain a Level 2 Certificate in Knife Skills, Certificate in Health & Safety and Certificate in Food Safety in Manufacturing.

Progression Options

On successful completion of the course, you could continue your studies and apply for a Level 3 Apprenticeship.

Entry Requirements

There are no entry requirements but course entry is subject to a
successful interview. You will complete an English and math initial assessment,
and if you have not achieved a grade 4 (C) in GCSE English and maths, you
will work towards a functional skills qualification during your
learning.
