Course Overview

Learn how to make a display of Poppy sugar flowers. How to make and cover a deep fruit cake the professional way. Create a display of Christmas Roses (hellebore), Winter Berries and Pine Cones to adorn your Christmas cake. Learn how to make a selection of modern sugar flowers to adorn a 2 tier wedding cake.

This course is suitable for those with some experience of sugarcraft and cake decoration looking to extend their skills.

Over the 20 weeks course you will create a display of sugar flower Poppies (to commemorate armistice day). Bake a deep 8” fruit cake to then cover with marzipan and sugarpaste achieving super sharp edges with a smooth finish. Create a display of Christmas Roses (hellebore), Winter Berries and Pine Cones to adorn your fruit cake just in time for Christmas. You will need to provide the ingredients and bake a fruit cake in readiness for week seven. A recipe with be provided.

In the New Year you will make a selection of modern sugar flowers and foliage which include Cosmos, Lilac, Lavender and hydrandrea leaves and learn how to cover 2 deep dummy cakes achieving super sharp edges with a smooth finish. Learn how to place and arrange your sugar flowers to a professional standard. Some equipment required for these flowers will need to purchased separately.

Learners will be required to bake a deep 8” fruit cake in readiness for week seven. You will need to provide a deep cake box to transport it to and from college and you might want to work in an apron for each session. From the first week you will need a block of dry oasis, a deep box with lid and some packing materials to safely transport your developing sugarcraft flowers. Please note there is no session on Thursday 3rd and 10th October. After Christmas the cutters for your sugar flowers will need to purchased separately and you may also need to purchase a variety of wires to support your flowers and foliage.

Assessment Methods

The tutor will provide demonstrations and feedback to ensure you know how to accomplish each stage of the process and give you ample time in which to do it.
