Course Overview

In this course you will learn the skills and techniques to create wired sugar flowers.

Over the 10 weeks you will create beautiful Foxgloves and Ferns using flower paste, cutters and veiners. You will learn how each flower and leaf layer is made and assembled, how to apply dust using edible petal dust to create depth and colour to enhance your flowers and foliage and finally how to put your flowers together into a stunning arrangement.

This course is suitable for those with some experience of sugarcraft looking to extend their skills. The course might appeal to those looking for a creative outlet or individuals who are planning on producing a showstopping cake topper for that special cake or simply sitting proud in your display cabinet.

This course is run by an experienced sugarcraft tutor and professional wedding cake designer. The course cost includes the cutters, materials and tools you will need to carry on making Foxgloves and Ferns at home.

Learners will be expected to provide their own flower paste to create the flowers and foliage and bring in a block of dry oasis or dummy cake and a storage container to transport their sugarcraft flowers to and from college on a weekly basis.

Over the ten weeks you will create your own Foxglove and Fern sugar flower arrangement.

Assessment Methods

The tutor will provide demonstrations and feedback to ensure you know how to accomplish each stage of the process.

We work in the Quantock Restaurant which offers a range of services from breakfast buffets to gourmet evenings. This means we’re able to practice our skills in a professional kitchen and front of house environment, and prepare ourselves for the industry.
